While we are working towards establishing some new normalcy, it is still important to remain vigilant and stay safe. Most restaurants are open for dine-in again now, but some of us may still prefer to eat in the comfort of their own home. Therefore, this Thanksgiving, some local restaurants continue to offer a to-go option so we can celebrate with friends and family safely at home. Here is my round-up. I will continue to update this list as restaurants continue to promote their offering.

Looking for 2021 Thanksgiving To-Go List? Click here!

So far 2020 has been a crazy year and it doesn’t appear to change anytime soon. As we continue to embrace the pandemic situation, we shouldn’t stop celebrating traditions and holidays. We just have to change the way we do things this year.

Thanksgiving is just around the corner. Are you cooking up a storm as usual? Or have you been stuck at home a lot more this year and are getting tired of your own cooking? Traditionally it’s not in our culture to celebrate Thanksgiving. Instead, we celebrate Moon Festival (aka Mid Autumn Festival). But this year, as newlyweds, we did something different and invited 4 friends over for a Thanksgiving dinner.

Courtesy of Echelon Foods, we received one of their Bacon Wrapped Turducken Premium Roasts and that was the star of our Thanksgiving dinner. Yes, it’s a turducken roast with Italian sausage stuffing and wrapped with bacon. A 3kg meaty goodness. It’s going to be an epic dinner!

Thanksgiving is not something we traditionally celebrate at home, but we do appreciate the extra day of holiday. However, from time to time we would do something to celebrate this occasion. For example, this year we’ve made some pumpkin spice cupcakes and I want to share the recipe here with you.

This recipe is adapted from a magazine with a few tweaks by us. Instead of using the regular orange pumpkin, we used Kabocha (aka Japanese pumpkin) because of its silkier texture and sweeter taste. Then we topped it with a maple & bacon icing to go with the sweet & savoury trend.

Pumpkin Cupcake

Ingredients

  • 2 cups all purpose flour
  • 1 tablespoons baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 2 eggs
  • 1 cup brown sugar
  • 3/4 cup Kabocha pumpkin puree
  • 1/2 cup melted then cooled butter
  • 1 teaspoon vanilla
