[Recipe] One Bite Nougat Puff – Chewy Confection with a Crunch 牛軋酥食譜

Last month, Mama Lam made some nougats. It’s good but it’s a bit boring, so she found a recipe to take it up a notch. It’s called Nougat Puff. It’s essentially nougat with the addition of crunchy crackers. We’ve made a few batches now and each time it has turned out well.

Ingredients

  • 200g Ritz biscuit
  • 200g marshmallow
  • 80g melted butter
  • 50g milk powder
  • 100g dried cranberries

Instructions

  1. Line your non-stick pan with parchment paper. We use a 8″ square pan.
  2. At low medium heat, melt the butter then add marshmallow until it’s fully melted
  3. Add milk powder and stir so it’s mixed in thoroughly
  4. Turn off heat
  5. Add dried cranberries, mix well, then add biscuit, and stir and mix
  6. Move the mixture into the non-stick pan, press it to shape and let set for 2 hours until cooled. Cut into bite-sized pieces.

Results? Chewy, crunchy candy. The recipe above uses just the basic ingredients. Mama Lam and I have tried to change things up and learned a few things.

Lessons Learned

We tried using Asian wafers in place of Ritz but they were too thick and not crunchy enough to have the same effect. Don’t recommend it.

You can turn this into different flavours by substituting 10g of the milk powder with flavoured powder, e.g. cocoa powder, matcha powder, sesame powder, etc. You can also buy those mini coloured marshmallows to add some colour to the nougat. If you can eat nuts, feel free to add in some roasted peanuts or crushed almonds too. Really, there are endless variations and combinations!

Variations

Here are some ideas:

  • Chocolate: 40g milk powder + 10g cocoa powder
  • Matcha: 40g milk powder + 10g matcha powder; substitute 100g marshmallow with the green mini ones for more prominent green colour
  • Sesame: 40g milk powder + 10g sesame powder; sprinkle toasted sesame seeds (black and/or white) on top to finish
  • Pink nougat puff: Substitute half of marshmallow with the pink mini ones
  • Green nougat puff: Substitute half of marshmallow with the green mini ones

Final Thoughts

We’ve made a number of batches and so far this has been a fool-proof recipe. Friends, family and coworkers have all enjoyed it. Hope you will like this too!
