Over a five-day winecation in the Okanagan (yes, we have an “official” name for our wine vacation) with our friends B&K, we visited a number of wineries, eateries and attractions in the area. One of which was TIME Winery & Kitchen in Penticton. Back in 2018, we had a tour of the winery prior to its opening, having the opportunity to speak with the late Harry McWatters and his vision for the urban winery. Fast forward to 2022, TIME has changed hands to Ron and Shelley Mayert, with the McWatters sisters continuing to manage the operation. B&K are wine club members there, and there are perks such as a discount on food and complimentary wine tasting. We ended up spending 3 hours at TIME, starting with a lunch.

Food & Wine
From the kitchen, we ordered the Flight of Frites. It’s usually only available during Happy Hour, but essentially we ordered a half-order each of the four flavours of Tallow Frites to turn them into a flight. It’s the best way to sample the flavours. And they were all amazing! I mean, you can’t really go wrong with fries fried in beef fat but they were perfectly fried and seasoned very well, and each flavour and its accompanying sauce went well together. My favourite were the Padano with Black Garlic Mayo and Salt & Pepper with the TIME Merlot Catsup.

There were also Confit Duck Wings. You don’t see duck wings on a menu very often, but when we do, we would usually order them. These ones were tasty. They were crispy outside, still tender inside and not dry. They were tossed in house-made hot sauce but they weren’t too spicy – just a hint of heat.

Between Mr. and I, we also shared a Featured Flatbread, which was Potatoes & Pork Belly. The server described the combination like perogies, but it also reminded me of baked potatoes. It’s not our favourite item from the kitchen. B&K ordered the Original Burger and it looked juicy. They said it was fantastic and worthy to be named the Best Burger in Penticton.

For the complimentary wine tasting, we tasted a number of the wines from their family of brands, some of which just received an All Canadian Wine Championships (ACWC) award. Here’s what we tried and liked (indicated by 💚):

Through my connection, we also received a complimentary Sabre School experience. This experience is meant for a minimum of four people, where one person gets to physically saber a bottle of bubbly and everyone enjoys the fruits of labour. Larry was a great teacher. He said no one has failed under his watch and I was glad I wasn’t the first! The trick is to ice the bottle for an hour, then you hold the bottle tilting up at a 45 degree and saber at the seam. And voila, I sabered a bottle of bubbly for the first time! We enjoyed the bottle of TIME Brut with cheese pairing, and that was the best way to wrap up our time at TIME.





Final Thoughts
TIME Winery & Kitchen may be in the city centre and not surrounded by vineyards, but they offer a variety of wine experiences that are fun and educational all the same. It’s beautiful inside and I thoroughly enjoyed our time there. Given it’s easily accessible in the city, it’s a great location for locals to hang out with friends and family over delicious food and great quality wine. It should also go on every out-of-towner’s list when they visit Penticton.
